Our dry Rosé sparkling wine consists of Pinot Noir and Chardonnay grapes grown in our Carneros estate vineyards. This beautiful pale salmon colored Rosé offers a mouthwatering nose of strawberry, pear, rose petal, and vanilla. It is filled with flavors of bright cherry, raspberry, and tart plum and delectable acidity provides an elegant finish. This sparkling wine pairs well with wide range of dishes such as fish, shellfish, and brie.
The grapes were whole cluster pressed to avoid bitter compounds and preserve delicacy. The juice was then chilled, settled, and racked to encourage a clean fermentation in stainless steel tanks at 55 to 60 degrees fahrenheit to retain its fruity, vibrant freshness. Proprietary yeast was used for the secondary fermentation. The wine then spent a minimum of 12 months in tirage (on the yeast) for aging using the traditional methode champenoise to create the tiny bubbles and complex flavors.
