Our Brut sparkling wine is crafted from Chardonnay and Pinot Noir grapes grown in our Carneros estate vineyards. The nose is fruity and fresh. It is filled with citrus and delicate pear and floral notes that merge into intense, delicious and complex flavors that fill your mouth with layers of pear, apple, and white peach. Crisp, balanced, creamy mid-palate and a lingering finish. It will continue to develop as it ages. Excellent for reception and cocktails parties.
Our Carneros Brut was carefully crafted from hand-harvested Pinot Noir and Chardonnay grapes from our Estate vineyards in the Sonoma Carneros appellation. The grapes were whole cluster pressed to avoid bitter compounds. The juice was then chilled, settled, and racked to encourage a clean fermentation. Proprietary yeast was used for the secondary fermentation. The wine then spent a minimum of 12 months in tirage (on the yeast) for aging using the traditional method champenoise to create the tiny bubbles and complex flavors.
