This Pinot Noir has intense aromas of dark cherry, raspberry, and strawberry as well as a hint of oak notes such as clove, caramel, and vanilla. Bright red berry flavor expands on the palate and melts into soft, natural acidity. Supple, refined oak notes add depth and make the finish elegant.
The grapes were hand-picked at the peak of ripeness. The clusters were destemmed and whole berries went through cold soaked for 5 days before the inoculation. Gentle extraction of grape flavors, tannins, and color were attained by spraying the cap twice daily during fermentation. The wine was aged in French oak for 10 months.
