The blend reveals concentrated aromas of cassis, blackberry, and plum as well as various bouquets such as roasted coffee, nutmeg, and molasses. The matured dark berry flavor slowly develops on the palate. Delectable oak notes such as cocoa, cinnamon, and vanilla melt into silky texture and lingers long in seductive finish. Complex and well-balanced.
All of the grapes for this blend were hand-picked at the ultimate ripeness. They were de-stemmed but not crushed, fermented, and pumped over twice daily. After completion of fermentation, portions of this blend received an extended maceration for up to 30 days in order to gain desired tannin structures and were gently pressed. The blend was racked multiple times throughout the aging process and stayed in 100% French oak barrels for 24 months.
