This Tempranillo has delectable aromas of black berry, red currant and delightful spice notes such as allspice, black pepper, and clove. A layer of dark berry flavors expands on the palate while lush tannins and sweet oak notes add depth and complexity. Just like Rioja wines from Spain, this Tempranillo pairs well with roasted meats as well as spicy dishes.
The grapes were hand-picked at the ultimate maturity. They were de-stemmed but the whole berries were kept intact. The must was cold-soaked for 5 days prior to inoculation and experienced 2-3 times of daily pumpover during fermentation. After the completion of fermentation, a portion went through the extended maceration to obtain softer tannins. The wine was gently pressed and transferred to 100% of French oak for 22 months of aging. During aging, the wine was racked quarterly to gain smooth and round texture.
