This is our signature Pinot Noir made by using the technique of new world and the traditional winemaking approach of old world. This Pinot Noir has a layer of beautiful aromas such as cherry, raspberry, strawberry as well as delectable bouquets of cinnamon and caramel. Vibrant red berry flavors jump out of a glass. Supple acidity lifts the mid-palate while nuanced spicy notes such as white pepper and cedar melts into the elegant finish.
The grapes were hand-picked in the night at the peak of ripeness. 10% of whole clusters were mixed with whole berries and the must went through cold soak for 7 days. During the fermentation, gentle extraction of grape flavors, tannins, and color were attained by the mixture of punchdown and pumpover two to three times daily. Following fermentation, the wine was aged in 100% French oak with 50% new oak for 14 months. The wine was bottled unfined and unfiltered.
