Our Estate Chardonnay has bright aromas of apricot, golden apple, a hint of lime and elegant bouquet of vanilla and custard cream. A layer of voluptuous tropical fruits and vibrant citrus flavors excites the palate while vibrant acidity holds a great structure. Sweet and toasty oak notes add depth to the mouthfeel and melt into a long finish.
This blend consists of Clone 4 and Dijon Clone 76 & 95. All grapes were picked by hand at the peak of ripeness. The whole clusters were gently pressed using a Champagne program and the juice was racked into 100% new French oak barrels for fermentation. The yeast lees were hand stirred monthly to enhance the rich, creamy mouthfeel. After completion of secondary fermentation, the wine was aged sur lees (on the yeast) for 14 months.
